With its intensely pigmented color, the red cabbage is a local type whose organoleptic properties and pigmentation due to anthocyanins derive from the thermal gradient of the areas at the foot of the Etna (strong temperature range between day and night).
The University of Catania, the Alcantara River Park Authority and the Local Government of Mojo are currently carrying out an activity to enhance and to acknowledge this product as typical of this area. The healthy properties of the Brassicaceae, the synergy and the protected area's environmental quality make the red cabbage from Mojo a sought-after product for both end users and farmers.
